Tasty Tuesday: Healthy Homemade Energy Bars

Did you hit the snooze button one too many times this morning? Need a healthy energy boost?

One of the busiest times of the year has arrived. With kids heading back to school and adults heading back to work from summer vacations, we all need a healthy energy boost during the day. This No Bake Choco-Cherry Almond Energy Bar is perfect for those busy days when you have no time to cook as it only takes 15 minutes to make. Not only is it quick and easy to make but now you know exactly what you and the kids are getting from your snack, unlike store bought energy bars.

This ON-THE-GO energy bar is an excellent source of Omega-3's (chia seeds), protein and fibre!

Recipe via Dramatic Pancake

No Bake Choco-Cherry Almond Energy Bar

Ingredients
  • 1½ cups pitted, dried dates
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup ChiaNutra chia seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/2 cup slivered almonds (unsalted)
  • 1/2 cup chopped pecans (unsalted)
  • 1/2 cup dried cherries
  • optional: sprinkle of sea salt
Instructions
  1. Purée dates in food processor until a thick paste forms. Add cocoa powder, chia seeds, cinnamon, and vanilla and almond extracts. Pulse until all ingredients are combined. Add the almonds and pecans; pulse until nuts are well incorporated into date mixture. Stir in dried cherries.
  2. Spread large sheet of wax paper on work surface. Transfer date mixture to wax paper, and press mixture into 1/2-inch-thick rectangle. If desired, you can even out the edges by trimming them with a knife. Wrap tightly in wax paper, and chill overnight.
  3. Unwrap block, and cut into 8 bars. Sprinkle with a bit of sea salt (if using). Re-wrap each bar in wax paper and refrigerate leftovers in an air-tight container.

Tasty Tuesday: Protein Pancakes

We've found a delicious protein pancake recipe that is made out of egg whites, protein powder and flax seeds. The best part is that it still tastes as good as the original pancake!

Webber Naturals offers two flavors of 100% Isolate, Low Carb European Whey Protein: French Vanilla & Intense Chocolate.

In the recipe you could also use PGX Satisfast Protein Powder: Very Vanilla & Rich Chocolate.

Protein Pancake Recipe

Ingredients:

  • 1/4 cup egg whites
  • 1 scoop vanilla protein powder (any flavour will do)
  • 2 tbs sugar-free vanilla coconut milk
  • 1 tbs ground flaxseed
  • 1/4 cup ricotta (gives thicker consistency, but optional)
  • 1 tbs natural nut butter (optional topping)

Spray pan with cooking spray. Pour mixture into pan with heat on medium. Cook one side until you see the bubbles form. Gently flip over pancake and cook on the other size until the middle is done (use a spatula or fork to check the center to make sure it’s done).

Tasty Tuesday: For Your Sweet Tooth

Get those taste buds ready for another Webber Naturals' Tasty Tuesday find - Chickpea Cookie Dough!

This week I came across Rabbit Food for My Bunny Teeth, a fun, colourful blog full of great DIY projects, fitness ideas, and, best of all, healthy, fun and unique recipes - like this Chickpea Cookie Dough recipe! I've always had a weak spot for cookie dough, so a healthy snack version of it like this was beyond intriguing! Different, yes - but delicious and healthy? Double yes!

You can dip anything from apples to graham crackers as Catherine suggests. Or, if you're like me, you may choose to go straight to the good stuff and opt to eat it with a spoon! Enjoy!

C hickpea Cookie Dough Dip
Makes about 3 cups of dough
keep servings to 2Tbsp per person/snack

1 15oz can of chickpeas
1 + 1/4 cup pitted medjool dates
1/2 cup water
1/3 cup chocolate chips (of your choice, you could use carob chips for a vegan option)
3 Tbs almond butter
2 Tbsp rolled oats
1 Tbsp + 1 tsp pure vanilla extract
1/8 tsp salt

Remove pits from the dates and place in a bowl or jar with 1/2 cup of water. Cover the bowl or jar and let it sit in the refrigerator for at least 8 hours (or overnight). Strain and rinse the chickpeas. After dates have soaked, combine the chickpeas, dates (including their soaking liquid), almond butter, oats, vanilla, and salt in a food processor, excluding the chocolate chips. Blend until smooth, scraping down the sides with a spatula as needed. Remove dough from the for processor and gently mix in the chocolate chips. Refrigerate and serve cold.
