It's December 31st and before we look forward to a new year, we're taking a look back...

I have to say it's been an excellent year. Don't you agree? 2012 has had its ups and downs but for myself and the team at Webber Naturals, and hopefully for all of you, 2012 has had plenty more ups than downs!

With great new content coming up on our website everyday, it's easy for articles from even last week to get completely buried in the archives. Tasty Tuesday: Roasted Winter Vegetables

Enjoy your fall and winter veggies in 3 easy steps!

This Tasty Tuesday, we've got a savoury vegetable treat the whole family will love!

Get roasting those vegetables! Maybe not over an open fire but you can get the job deliciously done with an oven! Try this roasting recipe from Whole Living and add some healthy colour to your dinner table. For once, my mouth is watering for vegetables! I've always loved our roasted winter veggies on special occasions during this frosty season. But with such simple preparation, why wait for a big family dinner?!

Roasted Vegetables (courtesy of Whole Living)

Ingredients

  • Cubed hard vegetables (carrots, parsnips, potatoes, beets, winter squash, sweet potatoes)
  • Olive oil
  • Herbs (rosemary or thyme)
  • Salt and pepper

Directions

  1. Toss cubed hard vegetables (carrots, parsnips, potatoes, beets, winter squash, sweet potatoes) with olive oil and some herbs (rosemary or thyme).
  2. Drizzle with olive oil and season with salt and pepper.
  3. Roast for 1 hour, stirring once or twice for even cooking.

So simple, no?! Whole Living has another delicious variation of roasted veggies atop a bed of lentils! Enjoy!

This season get your apple on with these delicious new ways to enjoy apples!

Crunch, crunch. Munch, munch. I love the crisp, crunchy sounds and sweet flavour of autumn's signature fruit, the apple. But sometimes if I have had too much of it, I get bored of apples and they lose their appeal. This is exactly what I don't want to have happen! Apples are excellent for your health!

Apples fall in the lower end of the glycemic index, containing a high volume of water and fibre. What does that mean? It means that you would have to eat a lot of apples before you significantly raised your blood sugar levels. Apples can help you add nutrition to your meals and keep you full longer!
