Become a Morning Exerciser!

WRITTEN BY  Ana Patrícia- 04 October 2012

Wake Up and Work Out in the Mornings!

It may seem impossible, but you can do it!

I can't even count the number of times, the number of evenings, that I've told myself, "Okay. Tomorrow, I will wake up early and exercise before going to work!" I can count the number of times that ever happened in my lifetime: three. Three morning run sessions within the same week...

What if I told you that the seemingly impossible task of waking up in the morning to get your daily workout was actually possible? Shape Magazine has shared their 7 Steps to Becoming a Morning Exerciser that will transform what seems to be the monumental task of moving with vigor and energy first thing in the morning something that can be accomplished, easily!

Don't let your only morning crunches be your efforts to press the snooze button a few times! I now have much higher hopes that the next time I aspire to wake up early for a workout, it will happen!

Tasty Tuesday: Homemade Mac & Cheese

WRITTEN BY  Emma Johnson- 02 October 2012

Comfort Foods in Fall

I can’t think of anything more comforting than homemade mac and cheese at this time of year. Usually loaded with calories and cream, our version is only 260 calories per serving. So you can enjoy great tasting comfort food with half the calories of a traditional dish. Pair it up with some freshly cooked vegetables and you’ve got lot’s of flavor and nutritional value.

Ingredients:

  • 2 tbsp light butter or margarine
  • 2 tbsp all-purpose flour
  • 1 1⁄2 cups skim milk
  • 1⁄4 cup shredded reduced-fat Swiss cheese
  • 1⁄4 cup shredded cheddar cheese
  • Pinch of salt & pepper
  • 1 stick of PGX (per serving)
  • 8 ounces whole-wheat elbow pasta, dry
  • 1 slice whole-wheat bread, processed into
    crumbs
  • 2 tbsp grated Parmesan cheese

Directions:

  1. Preheat the oven to 375° F. Prepare a 9" x 13" casserole dish with nonstick cooking spray.
  2. Place the butter in a medium saucepan, melt over medium-low heat. Add the flour and stir well with a wooden spoon for 1 to 2 minutes. Slowly pour in the milk, whisking to incorporate.
  3. Cook, stirring occasionally, until the mixture thickens, about 15 minutes.
  4. Meanwhile, cook the pasta according to package directions.
  5. Add the Swiss and cheddar cheeses. Stir to combine and heat the sauce until the cheese is just melted. Season with salt and pepper to taste.
  6. In a large mixing bowl, combine the sauce and cooked macaroni; toss to coat.
  7. Pour the pasta mixture into the prepared baking dish and top with the breadcrumbs and Parmesan. Bake uncovered until bubbly and golden, about 15 minutes.
  8. Remove from oven and let cool.
  9. Stir in 1 stick of PGX per serving for long lasting satiety!

Now, this is comfort food you can feel good about!

Enjoy!
