Collagen30® Baked Oatmeal Recipe

This recipe is simple and filling, making it super easy to meet your daily collagen needs. Loaded with nutritious and wholesome ingredients, most of which you likely already have in your pantry, it’s an excellent way to start your day and keep you full through to lunch. Add a dollop of Greek yogurt on top to make it extra filling.

One of the best things about this recipe is how you can easily change it up or customize it to your unique taste. Swap out the blueberries for any other berry or even a few chocolate chips if you’re looking to satisfy your sweet tooth. You can also use hemp hearts, flaxseeds, or any of your favourite nuts instead of chia seeds.

Prepare ahead of time to make your mornings run smoothly or enjoy freshly baked each morning. This recipe can easily become a breakfast staple to get your morning glow on!

Ingredients:

½ banana (the riper, the better)
¼ cup rolled oats
2 Tbsp chia seeds
1 egg
1 scoop Collagen30 powder
¼ Tbsp baking soda
A dash of fine salt
¼ cup whole, unsweetened blueberries, fresh or frozen

Directions:

There are a couple of options to choose from depending on your texture preference.


Option 1 – Blended (smooth consistency)

  1. Add all ingredients except the blueberries to a blender
  2. Blend until mixture reaches your desired smoothness
  3. Pour into a small oven safe bowl like a ramekin
  4. Fold in the blueberries
  5. Bake uncovered at 350°F for 20 minutes
  6. Let cool for 2-5 minutes
  7. Enjoy!


Option 2 – Not blended (hearty consistency)

  1. In a small oven-safe bowl (like a ramekin), mash the banana with a fork
  2. Add in all the other ingredients except the blueberries and stir with a fork until completely combined
  3. Fold in the blueberries
  4. Bake uncovered at 350°F for 20 minutes
  5. Let cool for 2-5 minutes
  6. Enjoy!
